the future of food (work in progress)
Food production is one of the greatest challenges of our time: how can we reduce waste, feed 10 billion people, eat better, and adapt to a changing world? It is also a major story—one that intersects with crucial contemporary issues including climate change, labor rights, land use, and numerous other concerns.
Together with writer and journalist Maxime Brousse, I launched “Entrée-Plat-Dessert”, a long-term documentary project. Our goal: to deliver in-depth narratives on food production through five globally consumed and produced ingredients—tomato, rice, chicken, banana, and coffee—which together form a complete meal.
While each story functions as a self-contained exploration of a specific aspect of food production, together they create a comprehensive portrait of our global food system. From the sophisticated foodtech laboratories in the Netherlands to the traditional agricultural landscapes of Rwanda, our work reveals how the future of food is being shaped at both ends of the technological spectrum.
